One of the best ways to gain an insight into a hotel’s offering is to read about mystery shoppers’ experiences.

Recently, we (unknowingly) welcomed a journalist from the Daily Mail into our hotel. Rating his overall experience 4/5 stars, he touched upon our ‘floral-is-back’ look, and ‘upbeat’ mood, before opting to dine at our main restaurant, Samphire.

Here, he devoured ‘delicious’ scallops and sea bass. He even threw in a reference to our impeccably-dressed waiter (we dress to impress here at Stanwell House!).

Concluding the press coverage, the mystery shopper left a passer-by with an enthusiastic recommendation, “you should give it a try!”.

This glowing endorsement showcases that, regardless of who walks through our doors, we always strive to maintain our exceptional standards.

As well as mystery shoppers, we’re pleased to have been visited by esteemed Telegraph journalist, Fiona Duncan.

Recently, Fiona paid our hotel in Lymington a visit, before publishing a refreshingly honest review. 

From our impeccably attired staff donning Harris tweed and silk waistcoats, to the curation of spaces with dusty-hued delights, Fiona completely understood the unique aesthetic we were striving for.

Despite dubbing us a ‘marmite hotel’ in the title of her article, she rated her overall experience 8/10. Accompanied by myriad other positive comments, her parting words were ‘the hotel is run with warmth and commitment, and service was smooth, friendly and professional’.

How are we reducing food waste at Stanwell House?

As environmental awareness grows, we believe it’s our responsibility as a hospitality business to set an example.

Reducing Food Waste: Why is it Important?

Did you know that the UK food industry wastes around 1.9 million tonnes of food annually?

Figures such as these have led to a surge of campaigns and initiatives aimed at tackling the issue. One such initiative is Stop Food Waste Day, which falls on 26th April. 

At Stanwell House, we’re proud to be implementing ways to minimise waste. We recently caught up with our Executive Head Chef, Chris, who shared his thoughts on the importance of reducing food waste in the hospitality industry.

Reducing Food Waste: Repurposing Ingredients

Our whole ethos at Stanwell House revolves around sustainability. For us, this starts in the kitchen.

Chris regularly introduces new, innovative ideas that help us to achieve our eco-friendly goal. 

He ensures that much of the meat that enters the kitchen is smoked and salted so that it lasts longer, reducing food waste. Chris also makes use of our various food and beverage outlets to minimise waste, as we strive to become more environmentally conscious at Stanwell House.

Elaborating on this approach, Chris said: “I try to interlink as much as I can. So, if I’m using a garnish, say asparagus or something as a starter in a bar, then I’ll use it as a garnish in the restaurant on a couple of dishes which reduces our footprint and reduces our payroll.”

Reducing Food Waste: Portion Management

In Chris’ opinion, one of the best ways of reducing food waste is through portion management. 

Here at Stanwell House, we don’t believe in piling plates high or ordering more food than necessary. Chris knows that this is one of the major culprits of waste in the hospitality industry, and we’re committed to changing that. 

“By managing portions carefully and mindfully, we can reduce waste and make sure that every meal is just right – for the environment and for our customers.

Chris said: “The biggest cause of food waste, I would say, is over ordering or portions being too large. Also, it’s always a majorly important thing not to over order, you have to know what’s in the fridges. 

“If we run out of a dish, I don’t mind too much because it’s a good sign that we’re running out of fresh food and again, assists us in less waste.

“It’s a hidden cost to the business I don’t think people really appreciate. I’m hoping it will become more focused on and I hope people are buying into it a bit more.”

The Responsibility of Restaurants

Sustainability is more than just a matter of business — it’s our passion and responsibility.

We believe that the UK food industry should unite in the fight against food waste, and we’re proud to be doing our part.

Discussing why restaurants should consider reducing food waste, Chris said: “I think it’s very much a big responsibility and I think it’s very important. When food waste is reduced as much as possible it’s good profitability for the business and it’s good for the environment. 

“The customers keep quite savvy these days in terms of where products are coming from and some people will openly say that, if it’s not a sustainable product, they’ll certainly let you know. 

“At the moment, I’m looking at salmon issues and the sustainability of that. So we don’t have salmon on our menus because some people are very against it.”

Chris’ Thoughts on The Long-Term Effects of Food Waste

At Stanwell House, we’re all about looking to the future and ensuring that our practices are sustainable in the long run. That’s why we take food waste seriously and Chris is leading the charge to future-proof our luxury hotel. 

With our efforts to reduce waste, we hope to set an example for the rest of the food industry and encourage others to join us on this important journey towards sustainability.

Speaking of this, Chris said: “At the moment, we’re looking into an automated composter. That will take all our food waste (apart from any large bones, which we try to avoid buying anyway) and compost it, all within 24 hours. 

“I would like to really think that if we can lead the way in terms of automated composters, more companies will follow with their time and effort. They’re not cheap to set up and there are implications but I think, in the future, I’d like to see more restaurants take the bet on waste. 

“They can sell it as a byproduct or they can give it away as a byproduct to their local communities, and I think that’s really important.

“The more the systems are in place, the more economical they’ll become and I think it’s better for the environment. Hotels are a luxury market which uses electricity and gas all day. So you need to make it as sustainable and environmentally friendly as possible.”

It’s well-equipped, with comfortable seating and delicious food — the perfect trifecta for a successful business event. 

Our versatile setting doubles up as an intimate celebration and events venue, hosting baby showers, private dining experiences and afternoon teas. It’s also ideal for those wishing to unwind, offering the opportunity for unique experiences such as wellbeing yoga sessions. 

Whether you’re using the space for a formal presentation or to perfect your rising sun, we strive to make your event come to life.

Dog-Friendly Rooms

Yes, you read that right! 

At Stanwell House, we don’t discriminate against our four-legged guests. We’ve taken steps to ensure our luxury staycation is dog-friendly, allowing our furry friends to stay and dine in our Orangery and Salt Bar, as well as the garden area (although, please ensure top table manners!).

We also allow your pampered pooch to stay overnight in our terrace rooms, offering special treats to ensure their staycation is as enjoyable as yours!

Introducing Our New Forest Boutique Hotel

Following an extensive £4 million refurbishment, we opened our doors to the public in early December.

We worked tirelessly to give our Grade II listed building a complete makeover, transforming our previously small bar into a cosy and welcoming reception, upgrading our kitchen and creating three brand-new dining experiences.

The Success of Our New Forest Boutique Hotel

Since our grand reopening, we’ve welcomed many guests back through our doors.

From celebrations to parties, special occasions to social gatherings, we’ve entertained both locals and tourists alike at our New Forest boutique hotel.

By returning Stanwell House to its former glory, we’ve also garnered the interest of some very special guests — the most recent being Susan D’Arcy from The Times

At Stanwell House hotel, we welcome all and any feedback.

We take on board our customers’ comments, using them to improve upon our services and create an exceptional guest experience. 

With this in mind, we loved reading our recent feature in The Times, which detailed Susan D’Arcy’s experience of our luxury suites, food and drink offering and location — which received an impressive overall rating of 8/10!

The Times Review: Thoughts on Our Suites

Our New Forest boutique hotel offers an array of cosy yet luxurious suites.

In The Times feature, Susan referenced our rooms’ subtle colour palette, sedate ambience and pastoral scenes on the walls. 

She scoped out all 14 of our Georgian rooms, complimenting the retention of original features. In particular, she enjoyed our loft rooms, commenting that the eaves added ‘cuteness and character’.

The Times Review: Thoughts on Our Food

During her stay, Susan opted for our red shrimp risotto in the Samphire restaurant. Showcasing our chef’s attention to detail, she labelled the dish ‘moreish’ and complimented the ‘perfectly-cooked’ pan-roasted sea bass.

The next morning, Susan opted to have breakfast in the idyllic setting of The Orangery. She enjoyed our selection of classic options, noting that we offer a range of dishes — from full English to smashed avo on toast (not just a millennial favourite!).

Situated in the heart of Lymington, we’re particularly proud of our surroundings.

Fortunately, Susan felt the same way — rating our location an amazing 9/10! She loved the cleverly-named boats in the harbour (Water You Looking At?), and dubbed our nearby Saturday market ‘worth a mooch’ (we agree!).

Our Salt Bar provides an unforgettable casual dining experience. We offer attentive service, charming décor and, of course, exceptional food!

All our comforting, seasonal dishes comprise the highest quality ingredients. With a unique twist on classic flavours, we offer an array of traditional favourites — all with an added touch of Stanwell sophistication. 

Guests can opt for family favourites, such as fish and chips, chicken kiev or ham, egg and chips. Or, they can treat themselves to a dish with finesse, such as our lobster macaroni, grilled steak or shallot tarte tatin.

Casual Dining | Our Sharing Boards

At Stanwell House, we believe in creating a casual dining experience that is suitable for all.

That’s why we’ve introduced the concept of delicious and nutritious shared dining options — creating the ultimate ‘home-from-home’ experience. 

Guests can tuck into one of our delectable sharing boards, which serve up to two or three people as a starter, or one for a main course. For £28, guests can enjoy our ‘From the Land’ board, consisting of sliced continental meats and pulled pork sausage roll. 

Or, for those who prefer the taste of the sea, we also offer a ‘From the Sea’ board for £26. This comprises flavourful accompaniments such as trout pastrami, mackerel scotch egg, mussel popcorn and pickled crab.

Striving for inclusivity, we even cater to those with vegetarian dietary requirements. Why not opt for our ‘From the Garden’ board, consisting of olives, beetroot hummus and stuffed peppers?

Our Salt Bar provides the perfect space to catch up with friends and loved ones.

Living by the ethos ‘drinks are best served with friends’, we offer various handcrafted cocktails in a warm, cosy setting.

Guests can indulge in classic favourites such as a Cosmopolitan, Old Fashioned or Espresso Martini. Alternatively, they can opt to sample one of our unique cocktail concoctions. These include an indulgent Apple Crumble, a Winter Aperol Spritz or a Chocolate Orange Martini.
